 Will do, I want to solve this issue for my install even if its a theme or
 plugin issue not core WordPress. Maybe on the weekend?

 In my install I can paste Markdown into the browser window and get the
 WYSIWYG Gutenberg editor to look right. I don't know a better way to
 communicate the blocks and markup I used (maybe a screenshot?)
