 In that case I think the first step is to obtain some clarification from
 the Wordpress team on the role of the site admin address. Is it an email
 address belonging to the site administrator, or is it the email address
 used for site administrative purposes? The short blurb within the user
 interface is unclear about this.

 Basically what I am asking is: is it meant to be used as a "To" address,
 "From" address, or both?

 (You may still not like any of these solutions, but in any case, to even
 know what makes sense as a proposal, we need to know how the site admin
 address is intended to be used.)

 In this case, it's a better choice than wordpress at SERVER_NAME, since it is
 configurable and likely to be set to an address that works.

 No problem, same as case 1.

 This is the hardest, because we absolutely still need an easily
 configurable "From" address, and all of the plugins that are currently
 using the site admin address as the "From" address are using it wrong.
