 To replicate the issue, I tried:

 Editing a post with a "Read More" link in the content.
 Modifying a Custom Post Type to include the Excerpt field and then
 updating the post by adding an excerpt.
 In both scenarios, the "content" key in JSON still included the full
 content. For my test, the Custom Post Type had show_in_rest set to true.
