Comment:

 After some further searching, [https://github.com/WordPress/wordpress-
 develop/blob/539c2fc7b5f3ea5c7ba90e05320d8c38e0f0c89a/tests/phpunit/tests
 /rest-api/rest-settings-controller.php#L692 this test] documents using
 `null` as a way to reset a value. It seems reasonable to just update the
 documentation for now.
