 Good point @blobfolio - and although we are planning to drop IE11 support
 in WordPress 5.8 it is important to consider these cases.

 Absolutely, we will provide a way to opt out of the shim as well as the
 mapping to a new format. In addition to code level filters **I plan to
 provide a plugin that will disable the shim/mapping**.

 when it comes to predicting the kinds of traffic any individual site might
 receive.

 Right! that is why sites can opt out - while the vast majority of sites -
 and users - still benefit. In the case of WebP, we are fortunate to both
 broad browser support **and** a solid shim.
