Some sort of acknowledgment on install (or download, or included text 
file, whatever) is fine, but opting out of security updates shouldn't be 
allowed. They can do the work of finding a plugin for that or not use 
wordpress; security is too important to let them shoot themselves in the 
foot with a built in option. Explain what it is and that its not really 
optional.

  As far as usage statistics and what not (php, mysql, wp versions, 
stuff useful for targeted development), an option for that (like when 
downloading chrome or whatever) seems reasonable, provided it explains 
what and why. I send "annonymous" statistics to google, I don't mind, 
tho it likely should be voluntary. (Perhaps usage statistics would show 
a better current version percentage this way ;-) )
