Ideally, you'd add a checkbox next to the email field, default it to
unchecked, that says "allow other commenters to contact me via email" or
something along those lines..........

Well, it's really up to each individual blogger. I always publish my
email address on all my pages, for example. I've never noticed an
increase in spam because of it. My non-published addresses get just as
much spam as my published ones.

It's extremely rare that I find a site which publishes commenter's
email addresses.
