 This is totally down to how the site's been configured. We insist on one
 extra field, but I don't think that's a set-in-stone decision, nor,
 frankly, an obstacle.

 Not to mention, WordPress does a terrible job at user registration. It
 exists and barely adequate for multisite. It would be nice to improve this
 in a more holistic way but I don't think we have the people power to make
 this change.
