 There is a plugin which do just that, http://buddydev.com/plugins/bp-
 editable-activity/ Although is paid at the moment. But I agree that it
 should have in core. A few important configs would be:

 How much time a user can edit?
 Type of user, can edit
 I guess this should have to be added with AJAX
