[wp-pro] Help With pages

Ok, here's my question.  Probably a stupid one, but I thought I'd ask the experts.  here's my site.  http://www.celebrityviplounge.com

For the toolbar that I have placed on the bottom of the page, how do I go about writing a blog post and having it only show in that particular category? 

For example,  on the bottom I have Fashion...how do i write a blog so that when a visitor clicks on fashion, only the fashion related blogs show up?  So, in a sense, it is actually just a separate page.  Does that make sense?

If I could write a blog entry and specify where it goes, that would be cool...for example a fashion or regular post...or even for the Interviews as well.
