Vim.

The major advantage of vim is, once you're familiar with it, it doesn't
matter wether you're editing a file on your workstation, on the server over
SSH, on an embedded device through a nullmodem terminal ... vim, or at least
vi, is almost always installed.

Emacs also very powerful, but not as available by default.

GVim is also ported to just about every platform in existence.
