That depends on what is at risk: the cost of downtime, an exploited
vulnerability, corruption, etc. The list can not answer that for you.

There is an alternative that still allows you to use Subversion for
installation and upgrades without running trunk: svn switch. Use that
to upgrade as soon as a new version is tagged. You can also switch to
and from trunk with the same command, with the caveat that database
upgrades are not reversed.
