This is a shameless plug for my product, but might I suggest you check out
WP Hive (http://wp-hive.com)?

It allows an administrator to run multiple sites from a single instance of
WordPress, without the WPMU complexity.

I recently set up a WordPress site for my daughter's travel soccer team and
the coach who coordinates all the travel teams approached me about doing
something similar for the other seven teams that fall under his charter.  It
will be fairly easy for me to setup each team with WordPress running on a
sub-domain but I am wondering if it makes more sense to run this with MU.
Any guidance on pros or cons before I embark down the multiple WP instance
path?  I found one link (http://wordpress.jdwebdev.com/blog/wp-vs-mu/) but
was hoping someone might have some more practical experience.
